Serve with Crema Mexicana or Sour Cream or Yoghurt

I made this for breakfast in valentine but I was too lazy to put the recipe up.The great thing about this is that it doesn’t have to be valentine’s day to enjoy a heart-shaped meal/treat. It was my first time making this,I loved it so much,it has now become one of my go to favorites especially if I want something quick and delicious.

Serves 2,increase the recipe as needed.

You’ll need;

3 medium-large Potatoes

1 small onion

1 Egg

1 Tbsp Softened Butter

3 Tbsp Flour

3 slices of Ham or Bacon

Salt to taste

add softened butterMix in well

Add the flour, salt and freshly ground black pepper

Mix well

Add the ham or bacon

plus ham or bacon

Heat a pan with about 1/2 inch oil,you can just spoon portions of the batter into the oil and spread or use a form or mold

Heat some oil

Place the mold in the oil

Place some potato mixture in mold/form Spoon the batter in and spread quickly before it starts to crisp at the bottom

Spread as quickly as possible before it starts cooking Remove mold

Gently remove the mold/form

Keep forming until the pan is filled

Don’t turn until the bottoms have browned, turning it before it cooks can cause it to break.

Fry until crisp on both sides and drain on paper towels

Drain on paper towels

Spinach and Grilled Chicken Quesadilla

You’ll need;

2 Tortillas

Grilled Chicken torn into bits (I had some left over chicken, you can use any left over chicken you have in your fridge)

A few Spinach (frozen or fresh,if using fresh, blanch the leaves in hot water just to wilt it a bit)

1 cup Shredded Cabbage (blanched,it just makes it easier to eat)

1 small onion (sautéed)

3 tbsp Barbecue sauce

1 tsp Mustard

Cheese of choice (Mozzarella,if you’re like me)

Salt to taste

Black pepper to taste

Taco seasoning to taste(optional,I just like it)

1 tbsp Oil

Heat your grill pan or regular pan with 1 tbsp oil

Mix your barbecue sauce and mustard together and spread on the tortilla

You can sauté your onions (or not),I used 2 small frozen portions of spinach,if using fresh, you can use 3-4 or more leaves(it’s all up to you).Cut the onions and spinach into bits.

Place one tortilla in hot pan,add your spinach

Cheese

Blanched Cabbage and season with salt and pepper.

Put your shredded chicken in the plate/bowl you mixes your sauces in and coat the chicken with whatever is left of the sauces(I have a phobia for waste)

Add the chicken to the deliciousness in the pan

Cover with more cheese

I must have run out of cheese to have used this little and apparently,I did not have mozzarella too.

Cover with the 2nd tortilla

Turn and cook on the other side

a piece of my tortilla broke off,was still delicious

Let it rest a bit the cut into portions

Crepes filled with Apples and cinnamon

I love crepes, they are thin and really light and they are so versatile, you can eat them plain, filled with fruits, ice cream sorbet, etc or toped with fruits and whipped cream.the possibilities are only as limited as you make them.

Filling the crepes with apples is one of my favorite ways of eating them,it’s easy, quick and filling.

Filling

2 apples

3 Tbsp Sugar

1 tbsp Cinnamon(adjust to your taste)

Sliced Apples

Core, peel and slice the apples or you can chop them into chucks if you refer.I like mine like this.

Sliced apples,sugar and cinnamon

Toss the Apples, sugar and Cinnamon in a pot and set aside.

For the crepes

1 Tbsp melted butter

5 heaping Tbsp Flour

1 Tbsp Sugar

Pinch of Salt

1 Egg

4 Tbsp Milk

Few drops of vanilla

7 Tbsp Water (or you can use milk if you prefer)

Put the melted butter, flour, sugar, salt, egg and 2 Tbsp milk in a bowl.Mix with a whisk or a fork(which ever you have handy),it would be very thick. This prevents lumps from forming.

Add the remaining milk and water a little at a time and keep stirring until you have added all the liquid and have a smooth batter.

Heat your frying pan and add about 3 drops of oil,rub it around the pan with a paper towel.

Pour in your batter, rotating the pan so that the batter can spread.do this quickly or the crepes would be thicker that it should be.

Cook on 1 side and turn to the other side with a spatula or your fingers.

Remove when it is done and keep on a flat surface, repeat with the remaining batter.

Cook your apples, there is no need to add water, the juice from the apples will help it cook, but stir so it does not burn.

When you are satisfied with the texture of your apples, remove from heat(some days,I like it soft, some days,I like to have a little resistance when I bite into it,so the choice is yours)

Assembling

Lay on a Flat surface with the brown side facing down, that way, when you roll it up,it looks more attractive

Put your apple filling on 1 end about an inch from the edge. You can use as much or as little as you want.

Fold the long edges towards the middle.

Lift and tuck the end as you roll it up.

Short or long, thin or fat,it’s up to you

Serve and top with the apple syrup left in the pot(if any).

I served it with some Yoghurt. Delish.

Enjoy!

1 teaspoon baking powder

Abt 8 tablespoons flour

Abt 6 tablespoons water

Mix the dry ingredients together, then mix in the water.

Add the remaining ingredients ans stir well.

Heat a frying pan and add abt 1 tablespoon oil.

Pour the half the mixture in and spread well, make it as thin as possible.

When the side looks done and bubbles start to form on top, flip the pancake.

When it is cooked through, roll it up with your spatula and remove.

Cut up the rolls into about 1 1/2 inches and enjoy.

You can sprinkle some cheese on it,eat it with some ketchup or just have it plain,it’s all up to you.
