Crepes filled with Apples and cinnamon

I love crepes,they are thin and really light and they are so versatile,you can eat them plain,filled with fruits,ice cream sorbet,etc or toped with fruits and whipped cream.the possibilities are only as limited as you make them.

Filling the crepes with apples is one of my favorite ways of eating them,it’s easy,quick and filling.


2 apples

3 Tbsp Sugar

1 tbsp Cinnamon(adjust to your taste)

Sliced Apples

Core,peel and slice the apples or you can chop them into chucks if you refer.I like mine like this.

Toss the Apples,sugar and Cinnamon in a pot and set aside.

For the crepes

1 Tbsp melted butter

5 heaping Tbsp Flour

1 Tbsp Sugar

Pinch of Salt

1 Egg

4 Tbsp Milk

Few drops of vanilla

7 Tbsp Water (or you can use milk if you prefer)

Put the melted butter,flour,sugar,salt,egg and 2 Tbsp milk in a bowl.Mix with a whisk or a fork(which ever you have handy),it would be very thick.This prevents lumps from forming.

Add the remaining milk and water a little at a time and keep stirring until you have added all the liquid and have a smooth batter.

Heat your frying pan and add about 3 drops of oil,rub it around the pan with a paper towel.

Pour in your batter,rotating the pan so that the batter can this quickly or the crepes would be thicker that it should be.

Cook on 1 side and turn to the other side with a spatula or your fingers.

Remove when it is done and keep on a flat surface,repeat with the remaining batter.

Cook your apples,there is no need to add water,the juice from the apples will help it cook,but stir so it does not burn.

When you are satisfied with the texture of your apples,remove from heat(some days,I like it soft,some days,I like to have a little resistance when I bite into it,so the choice is yours)


  Lay on a Flat surface with the brown side facing down,that way,when you roll it up,it looks more attractive

 Put your apple filling on 1 end about an inch from the edge.You can use as much or as little as you want.

 Fold the long edges towards the middle.

 Lift and tuck the end as you roll it up.

  Short or long,thin or fat,it’s up to you

  Serve and top with the apple syrup left in the pot(if any).

  I served it with some Yoghurt. Delish.
